So I cannot even begin to tell you how many times I have forgot to thaw my chicken for dinner the day I need it. Then you have to defrost it in the microwave and you get those weird hot spots in it where you chicken gets though and it's pretty gross. Not a fan. This is a simple fix to those times when you forget to thaw your chicken but still want a hot delicious meal. I call this my quick fix chicken, sausage, and peppers.
My recipe serves 3-4, if you include a side dish. A side of brown rice would go great or some greens as well. This dish takes about 30-45 minutes to cook.
1. Add four pieces of frozen chicken into a frying pan. Do not add any oil. Set your heat to medium.
* We do not eat regular sausage so I use turkey sausage.
2. The awesome part about this recipe is that your sausage can be frozen too. Cut the sausage into bite size pieces and set aside.
* In honor of watching Bobby Flay grill some poor woman on the Today show, I am going to remind everyone that it is easiest to cut the ends of the onions before you peel it and cut it.
4. Add your onions to your chicken and continue to cook at a low heat.
5. When your chicken is almost thaw, you can toss in your sausage and continue to cook at a low heat.
6. Once your chicken starts plumping up and cooking, feel free to add your peppers. You can then turn your heat up to a low-high (confusing huh? Basically, turn it up a small amount above medium) and continue to cook until your chicken is cooked. If you need to add liquid, go ahead and add some water or chicken stock.
*I prefer the brand seen above. If you can see the ingredients, plain and simply, Red and Yellow Bell Pepper. The peppers aren't those small cubes either, they are large chunks of grilled peppers, so very good.
Cooking this dish low helps ensure the chicken is cooked thoroughly. Any fat from the sausage is used as an oil to help flavor the dish. For an extra kick, add in some banana peppers and juice during the cooking.
